Controlled Fermentation Solutions for Better Coffee Processing

Coffee fermentation has become an important lever for producers looking to improve consistency, create differentiated sensory profiles and add greater value to processed coffee.

SafCoffee™ by Fermentis is a specialised range of fermentation solutions developed for professional coffee processing. The portfolio includes three selected yeast strains and one yeast-enzyme blend, each designed for different fermentation conditions, processing environments and sensory objectives.

For coffee estates and processors, this means moving from a largely spontaneous fermentation process towards a more structured and repeatable approach. By introducing selected fermentation cultures, producers gain greater process control while developing specific attributes such as fruit expression, varietal character, sweetness, body and overall cup complexity.

Shape the Flavour Profile Through Fermentation

Different fermentation cultures influence how a coffee expresses itself in the cup. The SafCoffee™ range lets producers work towards different sensory directions depending on the coffee, the processing method and the fermentation conditions.

Varietal & Origin
Expression

SafCoffee™
Green Origins

Respects the natural varietal character of your coffee, with a smooth body and notes of caramel and chocolate.

Tropical & Fruity
Expression

SafCoffee™
Sunrise Orange

Brings out passion fruit and tropical fruit aromas with subtle citrus, for a balanced cup with mild acidity.

Greater Sensory
Complexity

SafCoffee™
Deep Amber

A yeast and enzyme blend for a complex cup. It gives a chocolate-led profile layered with floral, fruity and spicy notes and a long finish.

Sweetness in Cooler
Fermentation

SafCoffee™
Cool Blue

Developed for cooler fermentation conditions, ideal for high-elevation estates (8°C–18°C), with sweet, vanilla and nutty notes and a long finish.

*Sensory outcomes are based on trials conducted by Fermentis. Results may vary with coffee variety, processing method and fermentation conditions.
